"Rib eye steak is made from rib eye (high sirloin) from the Angus cow breed from Uruguay. This steak is particularly delicious because of its tender texture and the marbling of fat in the meat, which guarantees a distinct meat flavour," explains chef Jakub Bíro.

Rib eye steak at Colette restaurant is served with French Béarnaise steak sauce, which is one of the most famous and popular sauces in the culinary world. Béarnaise sauce originates from the Béarn region and is considered to be the "daughter" of the famous Hollandaise sauce, the only difference is in the seasoning.  

This fabulous sauce is made with tempered butter, egg yolks, white wine vinegar and herbs. Its flavour is delicate and perfectly suited to juicy steaks. Along with the steak, you can also enjoy traditional French fries prepared according to the original recipe. Yes, they really are twice fried. This is the only way the chef achieves a taste you will love after tasting them.

"Béarnaise sauce is, honestly and simply put, my favourite sauce for beef steak. It's just the way I like it best - slightly sour and creamy, plus the aroma of tarragon and treacle....it's TOP," the chef doesn't hide his enthusiasm.
