The aroma of caramelized apples, melted butter, cinnamon and the delicious taste of crispy pastry. This is exactly what the French apple pie Tarte Tatin, which charmed even Monet himself, is like. You have probably already tasted the apple pie. But do you know how Tarte Tatin was created and how to prepare it according to the original recipe?

The story of the most famous apple pie began at the end of the 19th century in the village of Lamotte-Beuvron, south of Paris.
It is here that the Maison Tatin hotel stands, which at that time was run by the two Tatin sisters. Stéphanie and Caroline took exemplary care of the hotel, but the number of guests and the shortage of time resulted in their exhaustion.
One day, Stéphanie, who usually took care of the kitchen, made a huge mistake while baking a traditional apple pie.
Inverted apple pie
Although she had made this apple pie countless times, tired and exhausted, she forgot and let the apples simmer in butter and sugar for too long. However, since she didn't want to waste it and the guests were already waiting for their dessert, she tried to save the pie.
The result of the accident in the kitchen surprised even the author of the recipe. The guests couldn't get enough of her rescued cake.
She decided to cover the too dark apples with dough and put the inverted cake in the oven. When she served this "rescued" cake to eager guests, their reaction really surprised her.
Guests couldn't get enough of the apple pie and Stéphanie decided to include the Tarte Tatin inverted apple pie in the hotel's kitchen.

However, the legendary cake only gained worldwide fame thanks to a French artist. The painter Claude Monet liked Tarte Tatin so much that he ordered it every morning. After several attempts, he even managed to get the recipe from the Tartine sisters.
Recipe for Tarte Tatin

Although most recipes nowadays include ready-made puff pastry, it is important to prepare it yourself for a perfect result.
What will you need?
the road:
- 250 g plain flour
- 50 g caster sugar
- 125 g butter
- 1 egg
- a pinch of salt
- a pinch of vanilla
Apples:
- 7 - 8 medium apples
- 300 g caster sugar
- 1/2 teaspoon vanilla extract
Caramel:
- 200 g caster sugar
- 50 g butter
- 1/2 teaspoon salt

The first step is to prepare the apples. Peel them, cut them into eighths and cut out the cores. Put the sugar in a mould and let it caramelise, stirring constantly. Then add the butter a little at a time, stir and cook briefly. Finally, add a pinch of salt.
Remove the finished caramel from the heat, place the apple pieces in it, press them together and finally sprinkle with sugar and vanilla or cinnamon.
Make a soft dough with flour, sugar, butter, egg, salt and vanilla. Roll it out and cover the prepared apples in the mould with it. Press the edges and gently prick the dough with a fork. Place the tin in an oven preheated to 180°C and bake until golden, about 45 minutes.
When the cake is baked, wait 5 to 8 minutes and then carefully tip it out.
