A few weeks ago, a tasting dinner full of exquisite flavours took place at the Colette restaurant. We took care of this gastronomic experience together with the restaurant Gašperov Mlyn, which, like Colette, has long been on the top of the best restaurant rankings. See what a perfect harmony of French and Slovak gastronomy can look like.
The idea for the tasting dinner has been maturing in us for several months. It is not easy to combine the best of French and Slovak cuisine and we wanted the result to be really perfect. The preparation of this unforgettable evening took several weeks and we fine-tuned even the smallest details.
"The idea for this tasting dinner came from our desire to collaborate with other top chefs in the region and share our culinary experiences. We have long admired the work of the chef from Gasper's Mill, a renowned gastronomic restaurant in Slovakia. We are inspired by our shared passion for quality ingredients and innovative cooking. It was wonderful to combine our talents and offer guests a unique dining experience that represents the best of both our culinary philosophies," agree the owners of Colette.

Unique tasting dinner
The result of our work was an 8-course menu consisting of the best dishes from both cuisines. Guests who attended the tasting dinner could enjoy specialties such as fermented carrot tart or trout with pesto made from subtropical herbs. The tasting menu also included bread with goat's milk bryndza, crawfish ravioli and cod with mussels and asparagus. There were also exclusive sweet specialities such as marinated strawberries or canelés with rhubarb.
It was an invaluable opportunity to exchange ideas, techniques and perspectives with another highly respected chef.
"We wanted to offer our guests the best products. So we chose ingredients that are not only of the highest quality, but also represent the culinary traditions of both our restaurants. We worked closely with local suppliers and experimented with different techniques to create dishes that reflect both our styles. The result is a menu that blends creativity with tradition and offers a harmonious blend of flavours from different backgrounds."

During the whole dinner 6 Slovak wines were served, which were specially paired by the sommelier aces Slavomíra Raškovič and Antoine Corto Guichard from Colette. Guests enjoyed Noria wine from Château Rúbaň, Pinot Noir from Domin & Kušický winery, as well as Ordinarium from Víno Vdovjak winery together with delicious food.
